Slow Roasted Lamb

Ingredients:

  • 1 (3-4 lb) boneless leg of lamb
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions:

  • Preheat oven to 335°F (168°C).
  • Rub lamb with garlic, rosemary, thyme, salt, and pepper.
  • Place lamb in a roasting pan. Add onion, carrots, and celery.
  • Drizzle with olive oil.
  • Roast for 4+ hours, or until lamb is very tender.

Let lamb rest for 15 minutes before slicing and serving.

Note: Cooking time may vary depending on the size of the lamb.
