Slow Roasted Lamb
Ingredients:
- 1 (3-4 lb) boneless leg of lamb
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- Salt and pepper to taste
- Olive oil
Instructions:
- Preheat oven to 335°F (168°C).
- Rub lamb with garlic, rosemary, thyme, salt, and pepper.
- Place lamb in a roasting pan. Add onion, carrots, and celery.
- Drizzle with olive oil.
- Roast for 4+ hours, or until lamb is very tender.
Let lamb rest for 15 minutes before slicing and serving.
